Fresh Porcini are also known as 'Cep' or 'Penny Bun Mushroom, they are the King of the Mushrooms and an excellent find for Wild Gourmet Mushrooms. They are rich, Meaty and versatile with a great savoury flavour which is intensified when dried.
Fresh Hedgehog mushrooms are also known as 'Pied de Mouton' (Sheep's Foot in French)
They get there name from having tiny spines, like tooth like projections instead of gills under their caps.
The texture is firm, they have a rich, buttery and sometimes peppery taste and an ideal addition to any stews, casseroles or just eaten on toast as ideal as chanterelles.
Dried Porcini is one of the Wild Gourmet Mushrooms, it intensifies the nutty and creamy taste of this King of Mushrooms making it an ideal ingredient for Risottos, Stews and Soups.
